Green Rice Pudding


Green Rice Pudding

Ingredients:
1 3/4 cup milk
1/2 cup instant white rice
2 tablespoons sugar
2 tablespoons raisins (optional)
1/4 teaspoon salt
1 egg
1/2 tsp vanilla
2-3 drops green food coloring

1. Combine milk, rice, sugar, raisins and salt in a medium saucepan. Bring to a boil, stirring constantly. Reduce heat to just below medium and simmer for 6 mins. Stir occasionally.

2. Beat egg and vanilla in a separate bowl and add the hot rice mixture to the egg mixture a teaspoon at a time until the they are at a warm temperature. About 6-7 teaspoons.

3. While constantly stirring add the egg mixture to the pot with the rest of the warm rice ingredients. Cook on low heat for 1 minute without boiling then remove from heat. Stir in green food coloring. 

4. Let stand for 30 mins. Garnish with a sprinkle of cinnamon. Serve warm or chilled, store any leftovers in the fridge.






I love rice pudding.
