Leftover Turkey Enchiladas

After the holidays we all usually have an abundance of leftovers that need to be used up. Well have no fear I have another creative meal idea for all that fabulous turkey sitting in your fridge.

Turkey Enchiladas

  • 1-3 cups chopped turkey
  • 1-2 cups shredded cheddar cheese
  • 1-2 cups salsa
  • 6-12 flour tortillas
  • 1 can cream of chicken or mushroom soup
Mix turkey, soup, half the cheese and any additional seasonings in a bowl. Take a non stick casserole dish and spread half the salsa on the bottom. Spoon a portion of the turkey mix onto each tortilla, wrap tightly and place seam side down in the casserole dish. Top with remaining salsa and cheese. Bake at 350 for 30-40 minutes or until cheese is melted and bubbling.
