I absolutely love a good pork tenderloin recipe, it’s cheap, easy, and delicious! We make plenty of variations throughout the year and each one has its own cultural twists and flavour punches. With the rising costs of food it’s nice to have a cut of meat that’s not going to break the bank.
This is a recipe for Sweet Chili Pork Tenderloin that the whole family will love.
Pork tenderloin or leftover ham cubed
2 cloves garlic
1 bunch of green onions
1/2 cup shelled edamame
1 bell pepper
2 cups long grain rice
2 tbsp soya sauce
1 tbsp honey
2 tbsp oil
Sweet Chilli sauce
Salt and pepper
Step 1. Chop vegetables into bite sizes, mince or grate the garlic depending on preference slice green onions and set aside.
Step 2. Cook the rice. Add the rice to 4 cups of boiling water and reduce heat. Cover and let simmer until all liquid is absorbed. Keep covered and turn off the heat until ready to use.
Step 3. Add 1 tsp oil to frying pan and heat. Once hot add the tenderloin and cook on all sides until browned, about 1-2 minutes per side. Remove tenderloin from pan and place on tinfoil lined baking sheet and cover with sweet chili sauce cook on centre rack in 350 degree oven until cooked through.
Step 4. In the same pan as the tenderloin add another tsp of oil and heat then add the peppers, garlic, honey, salt, pepper, and edamame and cook stirring frequently for 4-5 minutes. Move the veggies to a plate. Heat the pan again with another tsp of oil and add rice. If using leftover ham just add the cubes ham in place of the tenderloin and fry gently until it’s slightly golden on each side before adding vegetables and sauce ingredients.
Step 5. Fry rice for 1-2 minutes and add the veggies and soya sauce. Toss it together and add more chili sauce if desired. Slice pork tenderloin into pieces and serve on top then sprinkle with sliced green onions.
