Chocolate Butterscotch Brownie Pudding Parfait


If you love chocolate, butterscotch, brownies and whipped cream, you are going to want to make this dessert immediately. I threw this pudding parfait together and honestly, it was so good I just wanted more and more!

It is creamy, chocolatey, a little chewy from the brownie pieces, and topped with all the good stuff. You can even switch up the toppings depending on what you have at home.

Ingredients

For the Chocolate Butterscotch Pudding

  • 1 package instant chocolate pudding mix
  • 1 package instant butterscotch pudding mix
  • 2 cups cold milk
  • 1 cup whipping cream
  • 1–2 scoops chocolate Boost powder
  • 1 scoop Naked Marine Collagen

For the Layers

  • Brownies, cut into small bite-sized pieces I used the Hostess Craze Brownies the are $2.95 at Superstore but you can use any brownie you like.
  • Vanilla pudding mix, added into the whipping cream and whipped together.
  • Mini chocolate chips


Optional Toppings

You can get creative with the toppings! Try:

  • Chocolate chunks
  • Chocolate shavings
  • Brownie crumbs
  • Mini chocolate candies
  • Caramel drizzle
  • Butterscotch chips
  • Fresh strawberries or raspberries
  • Blueberries
  • Crushed cookies

Instructions

1. Make the chocolate butterscotch pudding

In a large bowl, combine the instant chocolate pudding mix and butterscotch pudding mix.

Add the cold milk and whipping cream and whisk until the mixture starts to thicken.

Add the chocolate Boost powder and Naked Marine Collagen and mix until everything is well combined and smooth.

2. Prepare your brownie pieces

Cut your brownies into small bite-sized pieces. You don’t need them to be perfect. This is dessert, not a baking competition!

3. Layer your parfaits

Grab individual dessert cups, glasses or a larger serving dish.

Start with a layer of brownie pieces.

Add a layer of the chocolate butterscotch pudding.

Add another layer of brownie pieces, I added them to the bowl of pudding and then mixed them into the pudding to combine them near the end. 

Repeat the layers until your cups are nicely filled.

4. Add the whipped cream

Top each parfait with a generous amount of whipped cream. This vanilla pudding whipped cream is a whole new level of yum!

Then sprinkle with mini chocolate chips or whatever toppings you decided to use.

5. Chill and enjoy

Place the parfaits in the refrigerator for at least 30 minutes before serving. This gives all those delicious layers a chance to chill and come together.

My Favourite Part

The combination of chocolate + butterscotch + brownies + vanilla pudding whipped cream is seriously hard to resist. The brownie pieces give it a little texture while the pudding layers keep everything creamy and delicious.

And don’t be afraid to make these your own. Add berries, caramel, extra chocolate or whatever dessert toppings you have hanging around.

Just be warned: you may find yourself going back for another one… and then another one.

Quick Tip

Make a big batch for family gatherings, potlucks or when you simply want a dessert waiting in the fridge. You can make the parfaits in individual cups so everyone gets their own little layered dessert.
