1: Eggless Truffle Cake
This truffle cake is like a soft sponge, topped with yummy layers of creamy dark chocolate.

Ingredients: 150ml oil, 275gm sugar, 185gm milk, 375gm curd, 375gm flour, 9gm baking soda, and 9gm baking powder.

For the sugar syrup:
200gm sugar and 200ml water

For Trifle
500gm dark chocolate and 250gm of fresh cream

Preparation of sponge
First, mix all the ingredients and then add gradually add oil. Pour all the mixture in the mold of your choice, then bake at 180 degrees for 30 to 40 minutes.

Preparation of truffle
Cut dark chocolate and place it in a bowl. Now, boil cream in a pan and pour on chocolate and mix it with a whisk until it gets smooth. Let it cool down.

Preparation sugar syrup
Boil water and sugar together and make sugar syrup. Let it cool down before use so that it takes its correct form.

Assembling the cake
Cut the sponge into three layers. Apply sugar syrup on all three layers, then apply truffle on all layers as well as on the sides of the cake. Now, pour the rest of the truffle on the top of the cake. Refrigerate the cake and serve cold.

2: Chocolate Fudge Cake

Ingredients for the chocolate sponge: Three cups of plain flour, one cup cocoa powder, two tablespoons of baking powder, a pinch of salt, one cup of oil, 1 ½ cup of icing sugar, two eggs, two tablespoons of vanilla essence, one cup of curd and boiling water each.

For frosting
120gm melted chocolate, 150gm unsalted butter, 160gm castor sugar, 30gm cocoa powder and one tablespoon of vanilla essence.

For ganache
250 ml cream, 400gm chopped chocolate, and 50gm butter.

Preparation
Preheat oven to 170 degrees. In a bowl, mix all the dry ingredients. In a separate bowl, beat oil and sugar until they get tight. Beat eggs lightly and then add oil and sugar mixture with vanilla essence. Pour this mixture in dry ingredients and fold lightly. Place this mixture in the baking mold and bake for 25 to 30 minutes.

3: Mango Meringue Cake
Ingredients: Half cup plain flour, 125gm butter unsalted, four eggs, half tablespoon baking powder, four tablespoons of milk and one tablespoon of lemon zest.

Mango juice
20gm cornflour 
                   
Sugar
One cup mascarpone cheese, one tablespoon of cream and one mango.

Preparation
Preheat your oven at 180 degrees. Now prepare egg whites and yolks separated. In a processor add egg yolks, make a batter of cornflour, flour, lemon zest, butter, sugar, baking powder, milk and one tablespoon of mango juice. Spread the batter in a baking dish. Whisk egg whites and add sugar slowly in it while whisking eggs. Now spread meringue on top of the cake. Bake for 25 minutes.

Mango puree dressing
In a blender, add mango, mango juice and a teaspoon of sugar. Create smooth puree. Now, mix cheese and cream well until they get thick. Bring the cake from the oven and spread cream cheese and mango puree one after another.

4: Pineapple Cake
Ingredients: Two cups of plain flour, two cups of castor sugar, two large eggs, two tablespoons of baking powder, a few drops vanilla extract, one cup of pineapple, one pack of cream cheese and half cup of butter.

Preparation
Preheat oven to 350 degrees. In a bowl, add all the dry ingredients and mix them well. In a separate bowl, add butter, sugar and vanilla extract and mix. Now, add eggs, combine the butter and batter and add pineapple with juice. Bake for about 45 min. For the frosting, mix cream cheese, butter, vanilla, and sugar and spread them on warm cake.
